Glasses Time

Hello all

So I finally remembered to update y'all on what I did a couple weeks ago.  Truth be told I thought about it a few times but I'm just now getting a chance to write it.

Ok.

So I went to get my eyes checked and the answer to "Do my eyes deceive me?" is no.  My eyes don't deceive me because apparently they got a little better over the past couple of years.  How weird is that?  Turns out my old optometrist had me on too high of a prescription.

I went to America's Best where they have a killer deal that seemingly has no expiration.  You get a FREE eye exam if you purchase two pairs of glasses for 69.95 (that's one pair at 59.95 plus another in that price range for an additional 10 bucks).  Best part?  No tax!   Totally true.  It's also a great option if you don't have (or have very sucky) insurance.

That said, there is one small downside.  These glasses are BASIC as they come.  They look great but there are no bells or whistles.  Which means no anti glare.  Which means you always think your lenses are dirty.  Is it worth it?  If you have no better option then yes of course it is.  I won't say I'm thrilled but I am satisfied with my purchase.

To wrap it up, go to America's Best if you need new glasses but are between optometrists or insurances.

Thanksgiving

Well here we are

Tis the night before thanksgiving and all through the place, not a food dish wasn't prepared.  I've got flour on my face.

That's not true at all.

Complete lie.

Just takin' a crack at those mad rhyming skillz....

Anyway.....lol

I just wanted to say that while I've never seen any of you in person (that I know of), I am grateful for the few of you who do actually take time to read these entries I make, even if their only purpose is to make you smile since I'm such an odd ball. 

Besides, it gives me something to do.

I sincerely hope y'all have a good thanksgiving tomorrow if you celebrate it.  Even if you can't be with your loved ones, just know that you're loved.

Pumptastic Eats!

Made a bunch of things with that huge pumpkin and let me say I am so pleased with the outcome (outcomes?).

Tea/juice
Muffins
Pancakes
More muffins
Bread
 
And I STILL have enough to make one more something or other.

The recipe I am using for tonites muffins and bread is here if you'd like to give it a look.  It was well worth the read (which I have to admit is a pretty big deal for me since I usually skip to the recipe).

It's a Pumpkin Palooza Baby!

Hey y'all

OK so Halloween (which I am not a big fan of anyways but I digress as that's enough to fill up a whole other post) has come and gone and so the lovely orange pumpkin which was sitting on my porch looking...well...lovely has met its inevitable demise.

But alas!  Beautiful things can happen after death, and so this pumpkin went through (actually still is so I need to make this quick lol) a LOT before getting chucked into the can o' doom.

First and foremost, let me just mention super fast how oddly satisfying it was for new to carve into that thing with a butcher knife. 

I'm not concerned.

I'm makin' some roasted pumpkin seeds using this recipe from the mother of all recipe sites out there allrecipes.com

Next I'm going to scoop out the small dark strings and throw em in a pot to make a pumpkin tea drink.  I'll let y'all know how that goes.

Lastly, I'm going to bake the shell in the oven (after I find a link to use with the directions I'll come back and throw it up here - IF I remember. He he!) and scoop away the fruit and puree that sucker for a homemade pie! 

Pumpkin, you are not being wasted. 

That said, I'm going to go do this stuff now.

Walk This Way!!!!

Hey guys

Today's post is going to be a real quickie considering I'm already sending some traffic this way!

You may or may not know that I am on a little weight loss journey.  It's been working.  It has only been about a month or two and I'm already down 2+ inches off my waist.  Yayeah!!!

The secret????

Walking.  I am walking 2-3 miles at least every other day if not every day.

I'm also holding myself accountable by logging my food in my fitness pal.

It is so awesome.

Not only do I look pretty great (cough oh goodness I'm not a narcissistic meanie OK....lol just happy that I am seeing results) but I feel great too!

I also have a special tea at night which you can read about in my ACV post a couple weeks back.

Try it out if you wanna shape up!  And not just because you need a man (any grease fans here tonight?) But because YOU want to.  Do it for you.  There is no one better on this planet to please than yourself.

Apple Cider Vinegar Tea

Hi guys

Today I wanted to talk a little bit about my new twice daily go to: apple cider vinegar tea.

The main reason I wanted to start this regimen was to assist in my weight loss efforts.  I will report on that later after seeing the effects.  But!  What really prompted me to post today was the fact that I had a pretty uncomfortable headache (it was one of those nasty sinus aches where you can feel it all throughout your face and neck). 

Without thinking twice about it, I made my ACV concoction and drank it down.

Within twenty minutes, I felt 100% better.

Here are the ingredients I used for my drink:

One cup of boiled water
Two tbsp ACV
One tbsp honey
One tbsp turmeric
One tbsp ground ginger
One tbsp ground cinnamon
Some cold water to fill up the 8 oz mug

I highly encourage you to try this if you suffer from sinus aches.  Its better than pills that's for sure!

Cinnamon Roll Fiends Unite!

Y'all

You. Just. Don't. Know.

So you DO know that I occasionally get the unbelievable urge to bake something.

Well tonight, I, oh yes, I found that something.

It's this amazing recipe I found for a mother's day easy cinnamon roll coffee cake.  I know that sounds so hard but trust me it's not and man oh man if the batters tasty I can't even imagine how good the cakes gonna be. 

The anticipation is really getting to me guys.  I mean really.

Total Lunar Eclipse

Beefy! Cheesy! Pasta! Easy!

Dinner Tonight.

You guys this is going to be delicious I can already tell.  I grabbed another recipe from the folk (s) over at Genius Kitchen again. 

(Disclaimer: hilarious inferred curse word(s) placed throughout this post)

Here's the link to the recipe I used which will potentially change the way you think of penne pasta forever.

Now, I've gotta be honest with you.  I don't like recipes that take forever.  So naturally, I made a couple of changes, which you can also do.

1) I halfed it.

2) I didn't use an onion.  I was liberal with onion powder and minced onion.

3) I didn't have any minced garlic, so i just dumped the rest (don't worry there was not much) of my garlic salt in that sucker.

4) I didn't let the beefy cheesy mixture simmer for 20 minutes--I cut that s#@t down to 4 minutes tops.

5)  I added a splash of milk.

6)  I added some italian bread crumbs.

7)  I used sharp cheddar cheese instead of mozzarella since that's what I had.

8)  I also added just a SMIDGE of chilli POWDER since I didn't have the flakes.

9)  I didn't have any green peppers, so I omitted the s#%t outta that.

10) I think that's everything I modified so....disregard this one.

Well there you have it.  Oh wait!  I also added a massive squirteroo of ketchup, a 10.5 ounce can of condensed tomato soup, and no tomato paste, oh and no plum tomatoes...I just used a 10.5 ounce can of italian diced tomatoes undrained.

So all in all the link above really isn't what I am making afterall, but that up there my friends, that is where I got my inspiration.

In conclusion, I think this wins my longest blog post ever award.

Big to Who?

Perspective.

We all have our own.  But there's one thing I think we can all agree on.

Big Ben in London.

He's not really that big is he?  You may not know better if you haven't BEN there (get it?!?! I said Ben instead of been because I'm talking about big ben.....), but it seems true that Bens size is well, largely (oh I just can't help myself!!!) exaggerated.

Multiple animated films seem to deceive us into believing Ben is just massive.

While we can't exactly call it Little Ben, we can keep the truth in the back of our mind when we see this clock in films such as 101 Dalmatians, The Great Mouse Detective, & Peter Pan, that its just an exaggeration.

It's quite.....puzzling....wouldn't you think?  Speaking of puzzles, check out this sweet puzzle clock.  I think I might know someone who would like this.

Garlic Butter Potatoes- results

Hey

So the potatoes came out fine but....I give you a word (well I suppose it would be a phrase wouldn’t it?) of caution:  No matter what you do, make sure those slits you cut in the potatoes are LONG.  I didn’t cut them enough so they were still raw when I brought them out.  I ended up cutting them up and adding more seasoning on top.  I think they’ll be fine but they definitely won’t be accordion shaped anymore.

Which brings me to this tidbit on how it’s not the best idea to eat raw potatoes right here.

Garlic Butter Potatoes

hey y’all

So I had 5 potatoes left in a bag I needed to use up.  I found a recipe for garlic butter potatoes that I’m trying out now.  I’ll try to remember to post an update if they turned out bad or anything (or amazingly awesome).  I will mention that I made a couple of modifications listed below.

Minced garlic in the bottle instead of cloves.
Cheddar cheese instead of mozzarella cheese.

Beauty and the Beast: Enchanted Christmas

Hi guys!

Today I’m sitting here watching Beauty and the Beast: The Enchanted Christmas.  As a child you don’t always catch things completely.  It’s been years since I’ve seen this movie which I highly recommend.  Most Disney sequels just aren’t up to snuff in my opinion but this one takes the cake and is completely worth the time to view even as an adult if you are a fan of the original film.  As an animation fan, I really enjoy how they combine hand drawn animation with computer/digital animation.  All of the original cast returns along with some new voices, including Tim Curry as the villain Forte.   Give it a chance!

Heads in the Clouds

Hi guys

As I sit here on the couch to a nice cup of coffee about to watch UP, I got to thinking about the movie I watched yesterday.  These are for the benefits of my kid btw....gone are the days when I can just sit and do nothing for no reason hehe.  Anyway, the movie I watched yesterday was the original theatrical version of 1991’s Beauty and the Beast.

There are two moments in this classic film which have been under my skin, unbeknownst to myself in the primarily conscious sense, for years.  I see faces in the clouds.  Allow me to explain.

1) After the Beast realizes Belle wants nothing to do with him after spying via the mirror, after he says “she’ll never see me as anything but a monster.  It’s hopeless.”, there, as clear as day (at least to me), you see a picture of belles face in the sky.  I believe it’s in the upper left hand side of the screen in comparison to the beast’s face.

2) The second time I saw this was closer to the end of the film.  Specifically, the fight scene on the roof top of the castle around the point when Gaston says “it’s over Beast.  Belle is mine!”.  It’s (not quite too coincidentally) also in the upper left hand side of the screen.  This time it is the Beast’s angry face above Gaston’s head.

If I could manage to find a picture to add on to this I will do so.  I suppose I should have taken a couple of stills yesterday when I watched it but I did not.  Anywho, if anyone also sees the faces or, something else, shoot me a comment and let’s compare thoughts and perspectives!

M&M Cookies

hey guys

Today I baked some cookies using the recipe on the back of the party size bag of M&Ms.  They came out delicious but strangely enough they didn’t hold the shape I expected.  That probably has something to do with the fact that I didn’t use a cookie sheet.  Yep - I just used two 9x13 pans.  You live and you learn right?

Aches and Pains

This morning I woke up with a pretty UN exciting headache and it’s got me down pretty bad.  It got me thinking about the differences between acetaminophen and ibuprofen since those are the two most  readily available OTC remedies.

Acetaminophen is an analgesic which is pain relief.  It also reduces fever.  A commonly known brand name is Tylenol.

Ibuprofen is a non steroid anti inflammatory drug (nsaid) which reduces inflammation.  Commonly known brand names include Advil and Motrin.

I don’t know about y’all but I am seriously confused with the amount of times the weather has been changing over the past couple of days here on the mid east coast US.   In the span of two hours I went from needing a jacket to not wanting anything but a T-shirt.

I just wanted to share that and see if anyone else thinks it’s as crazy as I do.

Today I wanted to post about my decision to plant carrots.  I made a trip to the dollar store (no shame - best place on earth) a couple of days ago to get a few things and I came across this package of carrot seeds.  Made a complete impulse purchase.  The pot, the soil, and the seeds.  My child is picky as heck but loves to eat carrots.   I hope this goes as well as I am planning because I have never planted carrots before.

In the past I have planted flowers and avocados.  My avocado trees never bore fruit but it was a very fun experiment.  Here are the steps to plant an avocado tree if you’re interested:

Cut an avocado in half and take out the seed.

Eat the avocado — or not.

Rinse off the seed until there is no fruit left.

Get a solo cup or styrofoam cup (you could use a regular glass drinking cup but I’d think it’d be a PAIN to clean).

Get three toothpicks.

Place the toothpicks evenly around the thinner side of the seed.

Place the seed in the cup (the toothpicks will keep the seed suspended in the center of the cup) and fill with water just until the seed touches the water.

Change out the water every couple of days.

As the days pass the skin of the seed will begin to peel off and the seed will crack.  After that you will notice the plant pop out and begin to grow.  It’s best to start these out in a window sill inside the house since they need a lot of sun (at least until they are big enough to survive outside).

Once the branch is very thick and you have a few leaves then it’s time to transplant the tree to the outdoors.

There are several factors that could determine if your tree will bear fruit.  You will need the correct climate and at least another tree for starters.  Throw a comment down and let me know if you’ve tried this!

Social Media - Where the introvert becomes the extrovert

Hey y’all

I just popped over from Twitter to write this while I was still thinking about it.  I was just sitting there  reading some tweets (I’m very new to Twitter btw so that’s probably why what I’m about to tell you fascinated me so much) and I just couldn’t help looking at the numbers/stats consistently change.  I mean fast.  I wouldn’t exactly say faster than a speeding bullet but it was close.

People post things.  Fans or followers what have you see these things and can retweet them on their own page (much like you can share things on Facebook).  This simple fact alone just got me thinking that someone - anyone - who wouldn’t otherwise be the type of person to find out the latest gossip or discuss things with people or even just leave their house can be “in the know”.  Technological advancement seems to make people be new/different/gutsy.

The point of all of this is I find it amazing how people can hang out and know what a complete stranger thinks about almost anything without ever having to get out of bed (so long as you have a phone or tablet near by).

Quizzes on Facebook - possible data breach

Check out the attached article concerning the data breach of private messages.  Chances are you have nothing to worry about unless you have taken any of the quizzes made by the creator mentioned in the article.  Facebook Chairman Mark Zuckerberg is going to be scrutinized at Capitol Hill today and tomorrow.  Live updates can be found through a simple google search surely.  I don’t think that we will simply have to say good bye to Facebook but this might bring about more security (a.k.a. less functionality and freedom). Sweet Corn Casserole

hi guys!

I mentioned the other day that I was going to be making a corn casserole and I would let you know how it turned out (if I remembered...hehe!).  Well, it turned out great!  I used the recipe here and I doubled it and cooked it in a 9x13 inch pan.  I also used all regular corn since I didn’t have any cream corn.  I kept in some of the corn water to give more moisture to make up for not having the cream corn.  In addition to that I also added a little bit more sugar to taste.  On top of the mixture once I poured it in the pan I sprinkled some more sugar along with some cinnamon.  ‘‘Twas truly truly mouth watering my friends.

Fluffy Blanket?

What’s up y’all????

Okay so tonight I needed to wash a blanket - it’s one of my hubbys favorite blankets and he wanted it super soft.  Well come to find out I’m out of fabric softener so of course I head on over
to Googly Moogly to see if I could find someway to make some sort of fabric softener out of what I have in the house.

I found this article on wikihow with five different ways to make homemade fabric softener.  I used method two and so far so good.   Basically you get a cup of baking soda and mix that with two cups of hot water and stir it up good.  The baking soda won’t dissolve completely but it needs to be totally moistened.  Then you add one cup of white distilled vinegar SLOWLY AND A LITTLE BIT AT A TIME or else you’ll end up with a big ol’ mess since it reacts with the baking soda (anyone remember making those paper mache volcanos when you were a kid?).

Then you just dump it on top of the load and hope for something me ultra soft wannabe snuggles.

My next adventure will be to make a corn casserole tonight- I’ll try to remember to let you know how it goes!

Cake No Eggs Pt 2

The story continues...

Hi guys!

Well the cake I made today turned out to be a success.  I also made a chocolate frosting which came out really well.  I have attached both links below so you can peruse each one after reading this.  I will say that the only thing I changed about the cake was adding a little extra vanilla extract and also adding a little orange extract at the hubbys request.  I also added 10 drops each red and yellow food coloring for fun.

All in all I’d highly recommend combining these two recipes together if you need to make a cake in a pinch when you don’t have any eggs (or if you’re allergic).

Cake No Eggs Pt 1

Today is my wonderful husbands birthday and lately I’ve been on a baking streak.  I mean — staying home all day provides plenty of time to experiment and try new things right?   Anyway, I had it all in my head — I am going to make a delicious cake for my husband to celebrate his birthday.   Until I realized that I had no eggs.  Oh the irony.   So I am on the hunt for a recipe without eggs - stay tuned for what I chose and how it turned out!

Grocery tips

Hey guys

So today I want to talk a little bit more about some of the things I do to save some money at the grocery store.  There are two methods to saving money with groceries: instant savings and rebates.

Instant savings:

A lot of grocery stores have their basic marketing plan to try to get you to spend as much money as possible while you’re there.  This article here from Fox News contains what I like to refer to as “supermarket secrets”.  Sounds dirty right?  Give it a look and reconsider how you shop if you aren’t really big on REALLY saving money.

While there are these secrets, stores also have loyalty programs for continuous customers.  Take the MVP program at food lion for example.  All you need to do is purchase things that give you a discount at checkout for utilizing the loyalty program.

It’s very important to remember not to just buy something because it is on sale — not if you’re trying to actually save some money.  Just compare what you NEED to what is on sale.

Another thing to do is check your Sunday paper for coupons.  Most stores local to you will have their flyers available in the newspaper.  If you do not have a newspaper handy you can always check your
mailbox twice a month for grocery store flyers.

Lastly, another route for instant savings is to digitally add available coupons to your grocery store loyalty card by utilizing coupons.com which also has an app.

Rebates:

One of my favorite rebate apps is Ibotta because it’s so easy to use.  All you need to do is (presuming you have access to a smartphone) is to download the app, supply a phone number, and link your PayPal account.  When you’re ready to shop, just compare items on your shopping list with what is offered for rebate in Ibotta and do your thing.

Resurrection Reflection

Hi guys

So yesterday (seeing as it’s after midnight) was the day those of us who are Christian celebrate the gift of Jesus’ resurrection.

When I remember the sacrifice that Jesus made and how selfLESS he was/is, it makes me realize just how fragile and imperfect the human race really is.

For so many people, their own image in the eyes of other has to be or needs to be perfect.  But here’s a news flash: if you are human, you are not perfect.  It’s simply unattainable.  To think perfection in anything on this earth can be achieved is naive and ignorant.

This can be applied to anyone no matter what your beliefs—  no one on earth is spared from being imperfect.  Not a single person.

That’s why it is so important to come to terms with that and accept who you are as you are.

There is no room/time to be fake.  It’s so easy and dare I say, habitual, to be fake.  We try to present ourselves to others how we think they want us to be...but it shouldn’t be that way.

At the end of the day we are all just fallible humans.

Sensational Strawberry Cobbler

I went on a little grocery trip earlier today to pick up a few things.  As I entered the store I came upon  a pretty sweet sale on strawberries.  4 packs for 5 bucks!  So naturally I had to grab them up.  After making this impulse purchase, I thought about the reasoning behind why said strawberries were on such a great sale......the store was under going minor reconstruction and all of the berries were not refrigerated.

I also love to use hashtags somewhat incessantly even in a blog where they are not linked to anything because I think it makes me cool but I digress—-

So I thought to myself : “what am I gonna do with all of these strawberries?? Maybe I should bake something”

So I hit up that trusty ol’ search engine we all know and love and went through recipe after recipe until I found it.

This strawberry cobbler dessert from geniuskitchen.com came out pretty fantastic and it is super delicious.  The only changes I made were to drizzle some syrup on top of the strawberries, and also to just cut the strawberries up.  To heck with presentation! It’s all going to the same place, right?

Chicken pot chicken pot chicken pot pie

So I know in my last post I mentioned I would be talking a little bit more in depth about couponing and cash back apps such as this awesome app called Ibotta, but I actually want to discuss a recipe that I’ve been using repeatedly for the past five or six months.

I just discovered this delicious—no—SCRUMPTIOUS recipe from progresso.  These mini chicken pot pies are the shiznit.  My husband asks for them at least twice a month if not more.  I mean...they really are just that good.   I do tweak mine a bit and use sharp cheddar cheese instead of mozzarella and it comes out just fantastic.   I also buy the food lion brand biscuits which comes with ten biscuits. Yes I make all ten.  And yes.  They taste amazing.  Imagine if you only made 8!  Anywho, I would highly recommend trying the recipe.  It’s awesome.






Busier at home

This is first post on my blog and I have to say it’s pretty exciting!  This blog will be primarily about how I fill up my time since having to quit my job as an unfortunate necessity.  I will spare the details to avoid bad mouthing.  It’s just not one of my things.  I have gone from working 40+ hours a week to staying home full time.  After the worry and shock of it all started to dissipate, I began wondering what I would do to fill up my days.  Having a little one does keep me busy in and of itself.  Wouldn’t change the time I have with her right now for anything.  :)

My first task was to figure out how to get the most bang for my buck.  So naturally, I thought about couponing.  There are numerous apps available like Ibotta for one, which I will discuss in detail in my next post.   Until then, toodles!
